Wow, I totally got caught up in the sunshine this weekend. Spring was in the air, the sky was blue, not a cloud in sight and the sun was beaming down.
For just a split second I thought this may be it. So, with the sunshine filling my world with happiness I knew exactly what I’d be making for Tuesdays smoothie – Pina Coladas!! (minus the rum, because rum before the school run isn’t something I can advise, nor is it fitting for my target audience, hey ladies) However, if you close your eyes and lock yourself away in a quiet warm room whilst drinking this you may be able to vision yourself on a beach in Puerto Rico, Poco Grande glass in one hand and a good read in the other.
Although, if your house is anything like mine is at 7.30 am on a school day, you will REALLY need to focus. Unlike cow’s milk, coconut milk is lactose free so can be used as a milk substitute by those with lactose intolerance which is perfect for my little ones too.
Pineapple Turmeric and Coconut Smoothie
- Smoothie Maker, Blender
- 250 ml Coconut Milk
- 250 ml Unsweetened Soya Milk
- 1/4 Cup Soya Yogurt
- 1 tsp Ground Turmeric
- 1/2 Pineapple Outer Layer removed and cut into small chunks
- 1 Frozen Banana
- Add Milk and yogurt to the blender first and add the rest of the ingredients and blend until smooth
