If there’s ever been a National Day in the history of National Days I can get on board with its National Piña Colada Day.
Yes! It’s actually a day.
The piña colada hails from San Juan, Puerto Rico where it was created by bartender Ramón “Monchito” Marrero in 1954 by combining a heady mix of rum, coconut and pineapple and voila just like that our fave cocktail was created and there was no going back.
I’ve been totally caught up in the sunshine during lock-down and I can promise that if you close your eyes and lock yourself away in a quiet room whilst drinking this you may be able to vision yourself on a beach in Puerto Rico, Poco Grande glass in one hand and a good read in the other.
Although, if your house is anything like mine is during lockdown – you may REALLY need to focus that little bit harder. Before I start though, here are just a few benefits of the ingredients I’ve thrown into today’s mix because as you know- I’m not one to create something so delicious without there being health benefits involved. Where’s the fun in that?
Turmeric may be one of the most effective nutritional spices around and its benefits literally know no bounds. However, because during pregnancy we need to be a little more aware of what we’re consuming its crucial that turmeric is consumed in small doses and is definitely not taken in the form of supplements. A small amount of ground turmeric added to curries or a smoothie is considered safe, but please remember if you have any concerns speak with your midwife or doctor first.
Thanks to its rich abundance of antioxidants and anti-inflammatory properties, turmeric has been used for thousands of years – not only to flavour food but for medicinal purposes too. It can be incredibly soothing and aid the digestive tract preventing or easing constipation. It’s a fantastic addition to your diet if you’re looking for a natural immune booster and has also been shown to balance and level our our blood sugars too.
Pineapples are rich in vitamins, enzymes and antioxidants. They offer up a great supply of Vitamin C which will help your body absorb more iron, plus they’re loaded with potassium and choline. They may help boost the immune system and build strong bones, plus as they contain bromelain they can help in aiding the digestive system and reducing your chances of indigestion. A quick tip for checking to see if your pineapple is ripe – a ripe pineapple will allow a leaf to easily be pulled from its crown. If its too hard to pull out leave it for a couple more days.
Coconuts are highly nutritious and rich in fibre, vitamins C, E, B1, B3, B5 and B6 and minerals including iron, selenium, sodium, calcium,magnesium and phosphorous. Unlike cow’s milk, coconut milk is lactose free so can be used as a milk substitute by those with lactose intolerance.
Pineapple Turmeric and Coconut Smoothie
- Smoothie Maker, Blender
- 250 ml Coconut Milk
- 250 ml Unsweetened Soya Milk
- 1/4 Cup Soya Yogurt
- 1 tsp Ground Turmeric
- 1/2 Pineapple Outer Layer removed and cut into small chunks
- 1 Frozen Banana
- Add Milk and yogurt to the blender first and add the rest of the ingredients and blend until smooth
There you have it; sunshine in a glass. As the song goes – If you like Pina Colada and getting caught in the rain which I did on the way back from the shops today – this drink will keep your mood sunny all day long. Enjoy ladies and see you soon xx
